Slow Cooker Chicken Cordon Bleu

I have a new love affair, and it's with this recipe. It is so simple and so delicious. The perfect comfort food, and it's only 7 weight watchers points. I found it via Pinterest at laloosh.com and it is fantastic.

Ingredients:
5-6 chicken tenders
4 slices extra lean ham
1 cup 98% fat free cream of chicken
1/2 cup fat free milk
1/2 cup bleu cheese crumbles
1 cup stuffing mix


Start by mixing the cream of chicken and the milk together in a bowl. 


Cover the bottom of the crockpot with the mixture. 


Add the chicken tenders to the crockpot.


Add the 4 slices of ham.


Sprinkle half of the bleu cheese on the ham.


Sprinkle the stuffing on top.


Add the rest of the bleu cheese. 


Bake on high for 3-4 hours.

I was definitely pleased with the way this came out. The chicken was so tender and fell apart. I think I could have added a little bit more chicken, or a little less ham. The ratio seemed to be a bit off. The original recipe also called for chicken breast. I tend to use chicken tenders for some reason, I think because I have a fear of undercooked chicken and getting salmonella or something. Anyway, as for leftovers, I put the crock right into the fridge and reheated on low for about an hour for my roommate to eat the next night! I will without a doubt be making this again. The best part is, there is hardly any cleanup!
