Wednesday night is generally taco night. However, because we're watching our waistlines, I made a few adjustments to the regular taco. Beef has much more fat in it than ground turkey and quite honestly, the taste difference is so minimal, I would much rather use my calories on cheese. So, I decided to use ground turkey instead of beef. Greek yogurt is also the new big thing, and it crazy that it can be used as a substitute for so many different things. Plain greek yogurt can be used as sour cream and it is so much better for you, and tastes the same (if not better).
Ingredients are as follows:
1 pound ground turkey
1 packet of lower sodium taco seasoning
1/2 cup onions
1/4 cup green pepper (more if you don't run out...)
1/2 cup mushrooms
Lettuce, if you have it
3 tortillas
Plain greek yogurt if desired
Four cheese Mexican blend (not required, but highly recommended)
Start by browning the turkey in a non-stick pan.
When the turkey is brown, add 3/4 cup of water to the pan and the packet of taco seasoning, and mix.
While the turkey is browning, dice the vegetables and add to a skillet.
Before serving, place the tortillas on a baking sheet and warm in the oven.
I like to put the cheese and yogurt in bowls for people to add themselves!
Add the peppers, onions and mushrooms to the meat on the tortilla!
Add desired amount of cheese and greek yogurt!

Needless to say, Wednesday is one of my favorite nights. I never used to really like tacos very much but since I started to make them about a month ago, my taste buds crave them every week. I'm getting excited about this Wednesday just writing this post. You can add whatever vegetables you have on hand, I generally like to add chopped romaine lettuce also. The more veggies you add, the less meat and cheese you can fit, and the less guilty you'll feel!
