Simple Breakfast Sandwish

I was never an egg lover as a child, but now I can't seem to get enough of them. I have been making omelets pretty much every morning for the past few weeks, which is not so good for my cholesterol. Oh well. I decided to mix it up a little bit and make a sandwich. I am obsessed with Al Fresco chicken sausage, and recently found out they make a breakfast variety. Delicious. This sandwich is super easy, and comes out to 7 weight watchers points.

You will need:
1 Apple Maple Chicken Sausage
1 Arnold Sandwich Thin (I like the one with flax, but any will suffice)
1 Egg
Sprinkle of mexican cheese blend
Pam

Cat is not necessary. 


Start by cutting the sausage into quarters, and heating on a greased skillet: medium heat. 



Meanwhile, toast the sandwich thin.


When the sausage is warmed, remove from skillet and lower heat just a smidgen.


Add salt and pepper...
When first side is cooked: flip!


Add a bit of cheese...


Assemble the sandwich, and enjoy!

Delicious! Perfect little breakfast. I would not recommend taking a fried egg on the road with you, but scrambled or omelet style would work quite well. It's good to have a little mix up from a scrambled egg or even fried. It's also significantly cheaper and tastier than buying a breakfast sandwich from a bagel shop or what have you.
