Pesto Chicken with Mushroom and Onion

I decided to whip this up last night spur of the moment and did not really measure anything out so I will do the best I can to figure it out. I was working with what I had in the refrigerator, and it turned out very well. I was pretty impressed with myself. My roommate and I split this because neither or us were very hungry, so this would generally be enough for one or two people, especially with a side. I decided to throw the onion in last minute, so its not in the picture!

Ingredients:
3 Chicken breast tenders
1/3 cup store bought pesto sauce
1/4 cup chopped onion
1/4 cup chopped mushroom
2 teaspoons olive oil
Cheese (optional)


Chop up the mushrooms. (I already had the onion pre-chopped).

Add to pre-heated skillet with 1 tps olive oil.

Add the chicken to a separate pre-heated skillet with 1 tps olive oil.


Cook on medium heat for about 4 minutes per side.

Add pesto to chicken.

Spread the sauce around and wait for it to heat up.

Transfer the onions and mushroom to the other skillet. 
Let it heat for another minute or so.

Place on a plate.

Grate some asiago cheese on top!

After you add a sufficient amount of cheese, enjoy!

This was actually delicious. My roommate thought so too. I might even make it again tonight, considering the limited options I have in the fridge. I'm always a little weary about cooking chicken because I don't want to undercook it. The best way to tell if its done, I guess is to cut into it and make sure it's not pink. However, I didn't want to compromise the quality of the photograph!
