Strawberry and Feta Salad

This salad is delicious. I got it at a restaurant in Clearwater for the first time about two years ago and have been recreating it ever since. It can take a little while if you decide to use the turkey bacon and hard boiled eggs, but without those ingredients its very simple!

Ingredients:
5 cups spring mix lettuce
7-8 strawberries, cut
1/3 cup feta cheese
4 slices turkey bacon
2 hard boiled eggs
dressing of your choosing

Serves: 2-3


I usually use a raspberry vinaigrette, but did not have any today. 


Start by boiling water for the eggs, and adding the turkey bacon to a hot skillet on medium heat. 


Wash the strawberries and cut them up.


Add them to the lettuce.


When the water begins to boil, add the eggs (I boiled extra eggs to have on hand).


When they're all in...


Set the timer, 8-10 minutes.


Flip the turkey bacon once it browns on one side.



Place it on a plate with paper towel to soak up the extra grease.


If you buy feta and crumble it yourself, you get twice as much for the same cost!


Add the feta to the lettuce and strawberries.


Once the turkey bacon cools, chop it up.


Add it to the rest of the salad.


Let the eggs cool. I always have a couple casualties. 


Once they're cool...


Peel them.


Cut them.


Add them to the salad, and toss! 

I just realized how bad the last picture is. 

Anyway, this salad is incredibly easy to make and it would be a lot easier if you already had some eggs pre-boiled, and if the turkey bacon was cooked ahead of time. I think it tastes much fresher when you eat the eggs right away though! I used a parmesan vinaigrette this time and it was just as good, if not better than the raspberry. This size salad serves 2, or even 3.
