I had quite a bit of chicken left over from one of the recipes I posted last week. The OMG chicken as it has been referred to online. The chicken was good when I made it, but it was actually so much better as a leftover. I decided to use up some of the stuff in the fridge and decided to make it into a quesadilla. So good!
Ingredients:
2 leftover chicken tenders
1 whole wheat tortilla
1/4 cup red onions
Sprinkle of Mexican cheese blend
1 1/2 tablespoons barbecue sauce
Start by cutting up the chicken into small pieces and heating in the microwave. So the chicken didn't dry out, I heated the chicken for 3 minutes on power level 4.
While the chicken is heating, put the tortilla in a skillet on low heat to warm it.
Meanwhile, sauté the onions.
Once the chicken in heated, place it on the tortilla.
When the onions are cooked, put them on top of the chicken.
Add the cheese.
Squeeze the barbecue sauce on.
Flip the other half over, and let it warm for a few minutes on a medium heat.
Serve!
I made this twice last week with the leftovers. I am contemplating making the chicken again simply to make this meal again. The chicken was pretty good the first time around, but it had much more flavor in this dish!
