I was looking for a really easy recipe for chicken last night and I kept coming across this one called "OMG Chicken." It seemed simple enough, only 4 ingredients so I decided to try it out. I substituted greek yogurt for the sour cream to make it a bit healthier. Using the greek yogurt it is only 6 weight watchers points. I also made brussel sprouts for the first time ever. I had never had them until a few weeks ago when my roommate made them, and I fell in love with them.
Ingredients:
3/4 pound chicken tenders
1/2 cup greek yogurt
1/4 cup parmesan cheese
1/4 cup breadcrumbs
As many brussel sprouts as you'd like
As much onion as you'd like
Olive oil as needed for sautéing
Place the chicken in a glass dish sprayed with pam.
Cover the chicken with the greek yogurt.
Sprinkle the cheese on top.
Cover with the bread crumbs.
Place in the oven at 350 degrees.
Set the timer for 25 minutes.
Meanwhile, begin sautéing the onions.
Boil water for the brussel sprouts.
Place in the water and cook until tender.
Drain them and cut off the bottoms.
Cut in half.
Toss in with the onions and a teaspoon of olive oil.
Keep the brussel sprouts and onions on low heat to keep warm until the chicken is ready...

The next time I make this I would definitely use less bread crumbs. It seemed that there were so many, and they did not brown very well. A little less time may be more ideal if you're using chicken breast tenders, like I did. The original recipe called for chicken breasts, which would obviously take a bit more time to cook through. Overall, it was very good!
