Spring Mix Salad with Apple Chicken Sausage and Feta

I wasn't sure what to call this one because everything about it is delicious. I found this new apple chicken sausage at the store and was excited to try it. For some reason it screamed salad at me. I didn't know how it would be with the chicken sausage hot, it seemed odd to me. No worries, it was great. I was originally thinking of putting some apple pieces in it like a salad I've had at a restaurant before but didn't want to overload it.

So, I used:
3 cups spring mix
1 apple chicken sausage link
1/2 cup chopped white onion
1/4 cup feta
2 tbs dressing of choice

It's really simple to make too! I used spinach a couple days later when I made it again, very good!


Start  by chopping the onion and sausage.


Add to a saute pan with just a spray of pam. 





Add the spring mix to a bowl.


Add the feta. 

When the onions and sausage are browned, add them to the salad!
Use desired dressing...
Enjoy!

I ended up using a Sicilian Roasted Garlic Balsamic Vinaigrette, which I think was a much better choice compared to the Caesar Vinaigrette I had pictured. As I said before, I made this salad again a few days later with spinach and it was delicious also. I will definitely be making this again!
