This chicken was actually pretty simple to make. I got the recipe on Pinterest, I was excited at first because a serving had only 7 weight watchers points. However, upon further calculations, I determined that was for about 3 bites which was very disappointing. I will probably make this again, but definitely as a treat and not a regular thing! I modified the original recipe a little bit because I did not want to make as much as it suggested. The original recipe called for 4 chicken breasts, but did not say what weight. Anyway, this is the way I did it!
Start by preheating a skillet with the 1/8 cup olive oil. Preheat the oven to 325.
For the chicken:
1/8 Cup canola oil
3/4 Cup chicken tenders
Salt and pepper to taste
1 Egg
3/4 Cup corn starch
Sprinkle garlic salt
For the sauce:
3/4 Cup sugar
1/2 Cup distilled white vinegar
3 Tablespoons ketchup
1 Tablespoon soy sauce
Start by cutting up the chicken into bite sized pieces.
Season with salt and paper.
Crack the egg, and scramble it up.
Add the chicken to the egg wash.
Transfer the chicken to the corn starch, and coat.
Place in a preheated skillet and cook until brown, but not all the way through.
Mix up the ingredients for the sauce while the chicken is browning.
Flip over the chicken as it cooks on one side.
Transfer the chicken into a greased pan.
Pour the sauce over the chicken.
Place the chicken in the oven for 15 minutes.
After 15 minutes, stir the chicken and coat with the sauce. Do this one more time.
When the chicken is done, enjoy!
The original recipe said to cook in the oven for an hour. I found that after 45 minutes, it began to dry out. However, that was probably because I made less than the recipe called for. It was very good! Makes me think twice about ordering Chinese food now, knowing how delicious it can be made at home. It is also very simple. I didn't realize how easy it would be until I started to make it. As I said before, a long list of ingredients tends to scare me!
